Super easy to prepare and I promise the whole family will enjoy this simple dish. Makes 6 generous servings at 7 smart points or 6 more points each.
ingredients
- 1 7.5 oz packet of Pillsbury cookies (in the 4 value pack) If you cannot find this size, you can buy the largest packet and weigh, for those who cannot find Pillsbury products, try to 39; use pizza dough, but the points may be higher.
- 1 lb cooked lean ground beef
- 4 slices of cooked low-point bacon (I use Oscar Mayer)
- ⅔ cup light grated cheese
- ¼ cup ketchup
- ¼ cup mustard (I used a honey dijon)
- 2 tablespoons breadcrumbs
- ½ cup diced onions
Instructions
- Cook your ground beef and bacon on the stove, drain the fat.
- Preheat the oven to 350F, spray a 9x13 casserole dish.
- Cut your 10 small pillsbury cookies into 8 pieces each, evenly distributed across the bottom of the pan. Some ovens vary, so if you want, you can pop the dough pieces that are in the baking dish for about 5-10 minutes to make sure they cook all the time once the mixture is on top. (My oven is fine and does not require this step)
- In a bowl, mix the ground beef, ketchup, mustard, diced onion, breadcrumbs, 2 pieces of bacon, chopped (leave 2 more pieces aside) and ⅓ cup of cheese (leave the rest ⅓ side cup)
- Pour the meat mixture over the dough pieces of your dish. Bake for 20 minutes. Top with remaining cheese and bacon and return to the oven for another 10 minutes.
