Composition:
- 2 boxes (20 oz each) of DOLE® Pineapple slices
- 1/3 cup butter or margarine, melted
- 2/3 cup brown sugar
- 9 marashi cherries, cut in half
- 1 package (double layer) with yellow or pineapple flavor
Instructions:
- Drain the pineapple; reserve juice. Save 2 pineapple slices for another use.
- Mix the melted butter and brown sugar together. Divide the sugar mixture evenly into 18 (2/3 cup *) muffin cups sprayed with cooking spray. Lightly squeeze well-drained pineapple slices into the sugar mixture. Place the cherries in the center of the pineapple, cut sideways.
- Prepare the cupcake mixture according to package directions, replacing the required amount of water with stored juice. Pour 1/4 cup to 1/3 cup batter into each muffin cup.
- Bake at 350 ° F for 20 to 25 minutes, or until the wooden pick placed in the center comes out clean.
