Composition:
  • 2 boxes (20 oz each) of DOLE® Pineapple slices

  • 1/3 cup butter or margarine, melted

  • 2/3 cup brown sugar

  • 9 marashi cherries, cut in half

  • 1 package (double layer) with yellow or pineapple flavor


Instructions:
  • Drain the pineapple; reserve juice. Save 2 pineapple slices for another use.

  • Mix the melted butter and brown sugar together. Divide the sugar mixture evenly into 18 (2/3 cup *) muffin cups sprayed with cooking spray. Lightly squeeze well-drained pineapple slices into the sugar mixture. Place the cherries in the center of the pineapple, cut sideways.

  • Prepare the cupcake mixture according to package directions, replacing the required amount of water with stored juice. Pour 1/4 cup to 1/3 cup batter into each muffin cup.

  • Bake at 350 ° F for 20 to 25 minutes, or until the wooden pick placed in the center comes out clean.
