Super soft zucchini bread. A wonderful soft, fluffy and sweet bread cake perfect with a cup of tea!
INGREDIENTS
- 3 eggs
- 2 cups of sugar
- 1 cup of oil *** See notes below
- 2 cups grated zucchini
- 1 cup black nuts, optional
- 3 cups of flour
- 1/2 teaspoon of baking soda
- 1 teaspoon baking powder
INSTRUCTIONS
- In a blender, add the eggs, sugar, oil and zucchini and mix for 5 minutes.
- In another bowl, combine the baking soda flour and baking powder, then slowly add to the wet mixture and mix well.
- Pour batter into two greased 9-inch loaf pans and bake at 300 F for 1 hour - 1 hour 15 minutes.
