ingredients
For cupcakes:
- ½ cup unsweetened cocoa powder
- ½ cup of light brown sugar
- 1 teaspoon of instant coffee
- 1 cup of hot water
- 1 stick softened butter plus something to soak
- ¾ cups of sugar super or granular
- 1½ cup flour
- Lič teaspoon salt
- ½ teaspoon of baking powder
- ½ teaspoons of baking soda
- 2 teaspoons vanilla extract
- 2 eggs at room temperature
To freeze:
- ½ cup butter softened
- Softened 4 tablespoons cream cheese
- 4 ounces of melted dark chocolate (see recipe notes)
- 1 teaspoon vanilla extract
- Optional teaspoon of salt as desired (to cut sweetness)
- ½ cup unsweetened dark cocoa powder
- 1½ cup powdered sugar sifted
- Staining Black Food Gel (if applicable)

For cupcakes:
- Preheat oven to 350 degrees F / 180 C.
- Combine cocoa powder, instant coffee, brown sugar and hot water in a mixing bowl. Set aside.
- In a separate bowl, combine flour, salt, baking powder and baking soda and set aside.
