ingredients:
- 1/2 cup flour
- 1/4 cup whole wheat flour flour

- 2 large or extra large eggs

- 2 tablespoons of fresh lemon juice
- 1 1/2 tablespoons lemon zest
- 1/4 teaspoon kosher or sea salt
- 1/4 tablespoon baking soda
- 1/4 tablespoon baking powder
- 1/2 teaspoon vanilla extract
Lemon glaze:
- 1/2 cup sifted powdered sugar
- 2 tablespoons fresh lemon juice
- 1/2 tablespoon of cold water if needed
- lemon rind to sprinkle on top
instructions:
- Preheat oven to 340 degrees. Whisk an 8 to 9 inch outer syringe with cooking spray. Set aside.
- In a large mixing bowl, beat with a hand mixer or mixer, softening the butter with sugar until it is liquid. Add one egg at a time until well combined. Add the lemon juice and grate and mix until just combined.
