ingredients
- 1/2 cup softened butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 egg
- 3/4 teaspoon vanilla extract
- 1/4 cup molasses
- 1/2 teaspoon cinnamon
- 1/8 teaspoon cloves
- 1/8 teaspoon nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 2 cups all-purpose flour
- 1 teaspoon of baking soda
for frosting-
- 4 oz. softened cream cheese
- 1/4 cup softened butter
- 1 cup caster sugar
- 1/2 teaspoon vanilla
Instructions
- Preheat the oven to 325 degrees.
- Line a 12.25-inch x 8.75-inch x 1-inch jelly pan with aluminum foil or parchment paper and spray with nonstick cooking spray. Put aside.
- In a large bowl, combine the butter and sugars until they are light and fluffy. Stir in egg, vanilla and molasses. Whisk 1 to 2 minutes or until it turns a light brown color. Stir in the rest of the ingredients and mix until the dry ingredients are just combined. Press into the prepared pan and bake for 20 to 22 minutes or until the edges have barely started to brown. Cool completely.
- For frosting, whisk all the ingredients together until smooth. Spread the bars and cut them into squares. Serve immediately or store in an airtight container.
- * if you don't have a small jellyroll mold, you can use an 8x8 glass dish, just add another 2-3 minutes to the cooking time. *
