FROZEN SAUSAGES, EGGS AND CHEESE BREAKFAST
INGREDIENTS:
- 12 eggs, slightly beaten
- Kosher salt and freshly ground black pepper to taste
- 1 pound of pork
- 1 teaspoon chopped fennel seeds
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- A pinch of ground cayenne pepper
- 2 teaspoons of rapeseed oil
- 6 English muffins, divided and lightly toasted
- 6 slices of yellow American cheese
DIRECTIONS:
- Preheat the oven to 350 degrees Fahrenheit. Lightly grease a 9 x 13 baking dish or cover with a non-stick spray.
- Season eggs with 1 teaspoon of salt and 1/2 teaspoon of pepper. Add the eggs to the finished baking dish. Put in the oven and bake duck eggs, only about 13-15 minutes; let cool for 5 minutes. Cut 6 rounds using 3 1/2 inches of cookies.
- In a large bowl, mix ground pork, fennel seeds, thyme, garlic powder, oregano, cayenne pepper, 1 teaspoon of salt and 1/2 teaspoon of pepper.
- Divide the pork mixture into sixths and divide each serving into 3 1/2 inch cutlets.
- Heat canola oil in a large frying pan over medium heat. When working in batches, add cutlets to the pan and cook until golden brown, about 3-4 minutes per side; let cool for 5 minutes.
- Place one sausage pie on the bottom of the cupcake. Put 1 slice of cheese and 1 egg on top, and then cover with another top for a cupcake to make a sandwich. Repeat with the rest of the English muffins to make 6 sandwiches. Wrap tightly in plastic wrap and place in the freezer.
- To warm up, remove the plastic film from the frozen sandwich and wrap it in a paper towel. Put in the microwave for 1-2 minutes or until completely warm.
- Serve immediately.
