This light fried rice dish is a great alternative to a classic Asian dish. Ready in just 15 minutes, this recipe is the perfect solution for busy weekdays.

INGREDIENTS
- 1 teaspoon sesame oil
- 3 garlic cloves, minced
- 4 carrots, peeled and diced (225 g)
- 1/2 teaspoon red pepper, to taste
- 1 1/2 heads of cauliflower, enriched (1080 g, approx. 10 cups)
- 4 green onions, diced
- 1 cup frozen green peas (170 g)
- 1 cup frozen corn (170 g)
- 3 tbsp. Spoons of soy sauce (if necessary, use soy sauce without gluten or tamari)
- salt and pepper to taste
INSTRUCTIONS
- Bring sesame oil over medium heat in a wok or large saucepan.
- Add the garlic and stir for a minute or two.
- Add carrots and continue cooking for 3 minutes until they begin to soften.
- Add red pepper flakes, cauliflower, peas, chives, peas, corn and soy sauce.
- Cook for about 10 minutes, until the cauliflower is soft, stir often.
- Serve immediately.
