The homemade apple sauce I used had more scoopable consistency than pourable consistency.
INGREDIENTS
- 2 cups all-purpose flour
- 1 cup old-fashioned oats
- 1/4 teaspoon salt
- 2 teaspoons of cinnamon
- 2 teaspoons of yeast
- 1 cup granulated sugar
- 3/4 cup vegetable oil
- 2 beaten eggs
- 1/2 cup fat-free plain Greek yogurt
- 1 cup applesauce (house style or chopped is best)
- 1/2 teaspoon vanilla extract
ICING
- 1 cup caster sugar (add more if necessary to thicken)
- 1/4 cup applesauce
INSTRUCTIONS
- Preheat the oven to 350 degrees and grease the bread pan. I used a 9.25 by 5.25 by 2.75 inch metal nonstick bread pan.
- In a large bowl, mix by hand the flour, oats, salt, cinnamon and baking powder. Put aside.
- In another bowl, combine the sugar, oil, eggs, yogurt, applesauce and vanilla, then stir in the dry ingredients by hand until they are just right combined.
- Scoop the dough into the bread pan and bake for 45-48 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven and whisk together powdered sugar and applesauce for icing.
- When the bread has cooled a little, pour the frosting over the top. It will settle in the cracks and keep the bread moist. The glaze will set, but remain slightly sticky.
