Soft and moist, and bursting with apple flavo

The homemade apple sauce I used had more scoopable consistency than pourable consistency.

INGREDIENTS

  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1/4 teaspoon salt
  • 2 teaspoons of cinnamon
  • 2 teaspoons of yeast
  • 1 cup granulated sugar
  • 3/4 cup vegetable oil
  • 2 beaten eggs
  • 1/2 cup fat-free plain Greek yogurt
  • 1 cup applesauce (house style or chopped is best)
  • 1/2 teaspoon vanilla extract

ICING
  • 1 cup caster sugar (add more if necessary to thicken)
  • 1/4 cup applesauce

INSTRUCTIONS
  1. Preheat the oven to 350 degrees and grease the bread pan. I used a 9.25 by 5.25 by 2.75 inch metal nonstick bread pan.
  2. In a large bowl, mix by hand the flour, oats, salt, cinnamon and baking powder. Put aside.
  3. In another bowl, combine the sugar, oil, eggs, yogurt, applesauce and vanilla, then stir in the dry ingredients by hand until they are just right combined.
  4. Scoop the dough into the bread pan and bake for 45-48 minutes, or until a toothpick inserted in the center comes out clean.
  5. Remove from oven and whisk together powdered sugar and applesauce for icing.
  6. When the bread has cooled a little, pour the frosting over the top. It will settle in the cracks and keep the bread moist. The glaze will set, but remain slightly sticky.
