Paleo Chicken Fried Rice




Every percent of lunch for my daughter during college-year and I like to deliver hot lunch whenever possible. Tired salads were received, especially within the iciness. AIP Paleo Chicken Fried Rice is one she definitely loves and I really like her healthy!







I p.c. her lunch in a thermos like this. It keeps her meals warm until lunch. the trick to touch is to put warm water in a thermos even as you heat the pan. Keeps it warm for hours!




ingredients



  • 1 lb Organic Chicken Breast (or Thighs) (diced) Personally I like thighs (or leftover cooked chicken just skip step 1) AIP Paleo Chicken Fried Rice is a quick, easy and delicious one dish that is also healthy! Pack the leftovers in a hot lunch thermos!

  • 1 cauliflower head (rich) or 1 bag of frozen cauliflower rice

  • 1/4 c. coconut aminos

  • 1/2 c. chopped onions

  • 1-2 minced garlic cloves (optional)

  • 1/2 c. chopped or grated organic carrots

  • 1/2 c. green peas (optional) or chopped broccoli

  • 1-2 tablespoons. avocado oil, EVOO or fat of your choice

  • sea ​​salt to taste


instructions:



  1. In a large saucepan over medium heat heat 1-2 Tbs. oil until it's hot but doesn't smoke.AIP Paleo Chicken Fried Rice is a quick, easy and delicious one dish that is healthy too! Pack the leftovers in a hot lunch thermos! www.thehealthnutmama.com

  2. Add the chicken and simmer until browned for 2-4 min.

  3. Transfer to a plate

  4. In the same pan add another tablespoon or 2 of the oil as desired, heat until it burns but does not smoke.

  5. Add the onions and garlic and simmer until the onions are translucent

  6. Add the cauliflower and vegetables of your choice, sea salt and the amino ingredients of the coconut

  7. Add the chicken back and simmer until the vegetables and chicken are done for about 10-12 min.
