Steak Bites with Mashed Cauliflower Meal Prep







Garlic steak bites are served with a creamy cauliflower puree for a low-carb version of steak and potatoes. This easy meal is tasty and perfect for your weekly meal preparation.




Garlic steak bites are served with a creamy cauliflower puree for a low-carb version of steak and potatoes. This easy meal is tasty and perfect for your weekly meal preparation.


ingredients:

steak bites
  • 1 tablespoon olive oil

  • 1 lb New York steak (or boneless sirloin steak, sirloin top) cut into bite-size cubes

  • 2 tablespoons butter

  • 4 cloves of garlic, minced

  • 1 1/2 tablespoons low sodium soy sauce

  • 1/4 teaspoon garlic powder

  • 1 tablespoon finely chopped parsley

Mashed cauliflower
  • 3 cups steamed cauliflower rice until tender

  • 1/2 cup grated parmesan

  • 2 1/2 oz sour cream

  • 1/4 teaspoon garlic powder

Fried spinach
  • 1 tablespoon olive oil

  • 1 clove garlic, minced

  • 1 lb baby spinach leaves

  • salt to taste

Instructions:

  1. Add olive oil to a large non-stick skillet and bring to high heat. When the oil is hot, add the steak.

  2. Cook the steak bites for about 1 to 2 minutes on each side, letting them develop a golden brown before turning them over.

  3. While the steak is cooking, make the sauce. In a small saucepan, and the butter and garlic. Cook over medium-low heat until the butter is melted and the garlic begins to brown and the flavor of the garlic is infused with the butter. Stir in garlic powder and soy sauce. Taste and adjust as needed.

  4. When the steak is cooked over medium heat (still pink in the middle), reduce the heat to medium and pour the garlic butter sauce over the steak. Stir steak until cooked to desired doneness and evenly coated with sauce. If necessary, add more soy sauce. Garnish with parsley. Add the steak to the meal preparation containers.
Mashed cauliflower

  1. Tap dry cooked cauliflower rice and place in a food processor. Add the parmesan, sour cream and garlic powder and mix on high speed until the cauliflower is crushed and creamy. Add salt if necessary. Add cauliflower puree to meal preparation containers.
Fried spinach

  1. In a large skillet, add olive oil and garlic and bring to high heat. Add spinach and cook until tender. Season with salt, to taste. Add spinach to meal preparation containers.
